Ginger Lime Infused Vodka
Makes two 16-ounce jars or 4 3.5 ounce bottles
2 - 16-ounce mason jars
½ cup crystallized ginger pieces
750 milliliter bottle good-quality vodka
Wash the limes and peel two of them using a vegetable peeler so you have long strips of peel. Cut the remaining three limes into slices.
Add the crystallized ginger to the mason jars.
Place the sliced limes on top of the crystallized ginger, then arrange the lime peel on top.
Pour in the vodka and screw the lid on.
Store in the fridge and test the infusion every few days (up to two weeks).
Once the flavors taste strong enough, you can strain the vodka into another bottle and store in the fridge.
Note: The limes will start to dull in color after a day or two, so if you’re giving this as a gift and want to leave the lime and ginger in the infusion, it’s best to either refresh the lime and ginger before giving. If you don't want to include the limes and ginger pieces, you can make one large batch in a larger container and then strain infusion into the bottles.
